That would make a huuuuge puff. I piped 1" mounds, which made puffs about 1-3/4"... cut baking times by a third and it should be about right. I'm now thinking of experimenting with half-gruyere, half-cheddar, some dijon mustard, and maybe a bit of oregano and fennel seed... mmmmm!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-21718724.post-1158821911111738002006-09-21T08:58:00.000+02:002006-09-21T08:58:00.000+02:00hi astrid, your gougeres look totally awesome! wha...hi astrid, your gougeres look totally awesome! what lucky folks, the friends who had the opportunity to taste them ;) i love making choux pastry, so this recipe is definitely a must-try for me. thanks for sharing...Joycelynhttps://www.blogger.com/profile/16620313183747360569noreply@blogger.comtag:blogger.com,1999:blog-21718724.post-1158166173779638352006-09-13T18:49:00.000+02:002006-09-13T18:49:00.000+02:00Peabody -- 40 people cancelled?! But your neighbors must have been happy.

Mom -- Yes, I thought of you as I made these, knowing your weak spot for them... and even more today, as I tried another choux recipe to make... chouquettes, your "pêché mignon." Once I find a place to buy the granulated sugar for them I'll be able to make your favorite snack.Astridhttps://www.blogger.com/profile/02396975544230662006noreply@blogger.comtag:blogger.com,1999:blog-21718724.post-1158161331881059742006-09-13T17:28:00.000+02:002006-09-13T17:28:00.000+02:00Yes, please remove the recipe.
